Abstract: | O presente estudo pretende descrever e comparar dois métodos de espumantização: o
método Clássico (Tradicional) e o método de Cuba Fechada (Charmat), tendo como
referência um vinho de base IPG Bairrada.
A espumantização é uma etapa fundamental no processo de fabrico de vinhos espumantes
e, por isso, é importante perceber que a técnica tradicional desta espumantização é feita
em garrafa, e as leveduras que são responsáveis pela 2ª fermentação podem ser inoculadas
de forma livre, ou encapsuladas. No método de cuba fechada, a espumantização é feita
em cuba, e só posteriormente é feito o processo de engarrafamento.
O principal foco deste estudo é avaliar o impacto de dois métodos diferentes de
espumantização, aplicados ao mesmo vinho base, nas características químicas e sensoriais
dos espumantes.
Para além do exposto, pretende-se também estudar de que forma a utilização de leveduras
livres e encapsuladas influenciam as características finais dos vinhos espumantes;
Abstract:
Comparative study of two sparkling wine methods, classic method (traditional)
and closed tank method (Charmat).
The present study aims to describe and compare two methods of sparkling wine: the
Classic (Traditional) method and the Closed Cuba method (Charmat), using as reference
a wine based on IPG Bairrada.
Sparkling wine is a fundamental step in the process of making sparkling wines and,
therefore, it is important to realize that the traditional technique of this sparkling wine is
made in a bottle, and the yeasts that are responsible for the 2nd fermentation can be
inoculated freely or encapsulated. In the closed vat method, sparkling is done in vat, and
only afterwards is the bottling process carried out.
The main focus of this study is to assess the impact of two different methods of sparkling
wine, applied to the same base wine on the chemical and sensory characteristics of
sparkling wines.
In addition to the above, it is also intended to study how the use of free and encapsulated
yeasts influences the final characteristics of sparkling wines. |
