Culturemas da gastronomia cearense: contributos para a fraseologia da língua portuguesa

Abstract

Os culturemas têm, progressivamente, ocupado espaço nos estudos de linguística apli-cada, em especial na área da lexicografia. Eles são símbolos culturais específicos, estru-turados em lexias simples ou complexas, com significado correspondente a um conceito, atividade, ideia, crença, hábito, etc. culturalmente relevante e simbólico para os membros de uma comunidade e devem servir de referência para se conhecer a cultura desta. Logo, são objetivos desta investigação: 1. Inventariar culturemas da gastronomia cearense como potencializadores da criação/existência de expressões idiomáticas e de unidades fraseo-lógicas como contributos para a língua portuguesa; 2. Revisar criteriosamente a literatura existente sobre culturemas, metáfora, expressões idiomáticas e unidades fraseológicas; 3. Apresentar as relações estabelecidas entre língua e cultura, através do léxico; 4. Expor o maior número possível de expressões idiomáticas e de unidades fraseológicas oriundas de culturemas da gastronomia cearense, como contributos à língua portuguesa; e 5. Ela-borar um glossário de culturemas da gastronomia cearense, comprovando os contributos deles para a língua portuguesa, além do vínculo inseparável entre cultura e língua, através do léxico. Para fundamentar o trabalho, recorreu-se a Bauman (2012), Biderman (1978; 1981; 2001), Cabral (1972), Coseriu (1979), Cuche (1999), Faulstich (2010), Girão (2000), Isquerdo e Kriger (2004), Luque Nadal (2009), Nunes (2006), Pamies Bertrán (2008; 2011; 2012), Seraine (1959), Vilela (1997; 2002), entre outros. Do ponto de vista metodológico, optou-se pela pesquisa bibliográfica, em especial por ela permitir um novo olhar sobre objeto já existente; no caso desta investigação, verifica-se a publicação de diversos dicionários de falares do Ceará, contudo não se tem conhecimento de uma obra lexicográfica dedicada aos culturemas da gastronomia cearense e os contributos deles para a fraseologia da língua portuguesa, como a que se compôs aqui. Isso demonstra o ineditismo desta pesquisa. Com a realização dos objetivos, foi possível a composição de um glossário de culturemas da gastronomia cearense, no qual se verifica a relação da língua com a cultura através do léxico, que permite entender comportamentos sociocul-turais, crenças valores e hábitos de grande parte do povo cearense; ABSTRACT: Culturemas of Ceara gastronomy: contributions to the phraseology of the portuguese language The culturemas have progressively occupied space in the studies of applied linguistics, espe-cially in the area of lexicography. They are specific cultural symbols, structured in simple or complex lexias, with meaning corresponding to a concept, activity, idea, belief, habit, etc. culturally relevant and symbolic for the members of a community and should serve as a refe-rence to know the culture of this community. Therefore, the objectives of this research are: 1. To inventory culturemas of Ceará gastronomy as potentiators of the creation / existence of idiomatic expressions and fra-seological units as contributions to the Portuguese language; 2. Carefully review the existing litera- ture about culturemas, metaphor, idiomatic expressions, and phraseological units; 3. To present the relations established between language and cul-ture, through the lexicon; 4. To expose the greatest possible number of idiomatic expressions and phraseological units derived from the culinary arts of Ceará, as contributions to the Por-tuguese language; and 5. To elaborate a glossary of cul- tures of the cuisine of Ceará, proving their con tributes to the Portuguese language, as well as the inseparable link between culture and language, through the lexicon. In order to justify the work, we used Bauman (2012), Bi-derman (1978, 1981, 2001), Cabral (1972), Coseriu (1979), Cuche (1999), Faulstich (2010), Girão (1997), Luís Nadal (2009), Nunes (2006), Pamies Bertrán (2008, 2011, 2012), Seraine (1959) and Vilela (1997, 2002), among others. From a methodological point of view, we opted for bibliographical research, especially because it allows a new look at an already exis-ting object; in the case of this investigation, the publication of several dictionaries of speeches of Ceará is verified, however, there is no knowledge of a lexicographic work dedicated to the culture of Ceará cuisine and their contributions to the phraseology of the Portuguese lan-guage, such as the one composed here. This demonstrates the novelty of this research. With the accomplishment of the objectives, it was possible to compose a glossary of culinary cul-ture of Ceará, in which the relationship between language and culture through the lexicon is verified, which allows us to understand socio-cultural behaviors, beliefs values and habits of much of the people of Ceará.
